Proofing is the final rise before baking, when yeast produces carbon dioxide and the dough expands.

2. The surface shows large gas bubbles
A few small bubbles are normal, but overproofed dough can develop very large bubbles beneath the skin.

What Happens When Dough Is Overproofed?
When dough is overproofed, the gluten structure becomes overstretched and less able to trap gas.
The yeast may still be active, but the dough has lost the strength needed for a good oven spring.
In the oven, this can lead to several problems:

- Transform it into rolls or sheet-pan bread if it still has enough strength to handle reshaping
Severely overproofed dough often cannot fully recover because the gluten has broken down too much.
Even so, it may still produce edible bread, especially in forgiving formats.
How to Prevent Overproofing
Prevention is easier than rescue.
Bakers who track dough temperature and fermentation stage usually get more consistent results than those who rely only on time.
- Use visual volume cues, not the clock alone
- Keep a consistent room temperature when possible
- Measure dough temperature after mixing
- Learn the expected rise for your specific formula
- Use the poke test near the end of proofing
- Track bulk fermentation and final proof separately
If you bake with sourdough, pay attention to starter strength and dough feel.
If you bake with commercial yeast, adjust for ambient heat and the speed of your preferred flour.
Bread flour, all-purpose flour, and whole wheat flour all ferment differently because of protein and bran content.
When to Bake Sooner Than Expected
Sometimes the safest move is to bake earlier than your schedule suggests.
If the dough is close to doubling, feels airy but still strong, and passes a gentle poke test with a slow rebound, it may be ready even if the timer says otherwise.
